Chakchouka
Ingredients

| 2 | Red onions |
| 1 – 2 cloves | Garlic |
| 1 | Red bell pepper |
| 400 g | Diced tomatoes (canned) |
| 4 | Eggs |
| 100 g | Feta or sheep’s milk cheese |
| 1 bunch | Fresh herbs (flat-leaf parsley, cilantro, or mint) |
| to taste | Spice mix: sweet paprika, cumin, cayenne or chili flakes, cinnamon, salt, pepper |
| a little | Honey |
| to serve | Bread |
Preparation

Cook vegetables Sauté the finely chopped onions, bell pepper, and garlic in olive oil until soft.

Simmer sauce Add tomatoes, spices, and a little honey. Simmer for 10 – 15 minutes.

Cook eggs Make small wells, add the eggs, and cover until just set.

Finish Top with feta and herbs, then serve with bread.
